Pie With Turkey And Leek


For the dough:

  • 150 g soft spelt flour
  • 50 g integral rye flour
  • 100 g integral buckwheat flour
  • 1 teaspoon sea salt
  • 1 tablespoon olive oil
  • 140 ml water

For the filling:

  • 300 g chopped leek
  • 250 g minced turkey meat (or chicken)
  • spices: sea salt, pepper, sumac, cumin
  • 1 roasted red pepper in oil with garlic
  • 70 g butter
  • water


Knead the dough from the listed ingredients and leave in the fridge to rest at least one hour. Divide into six balls and stretch each as thin as possible. For the filling fry chopped leek on a little olive oil with addition of water, then add minced turkey and fry until meat change the color, remove from the heat and add spices. When cool a bit add chopped red pepper from the oil spiced with garlic and stir all. Grease each circle with mixture of water and melted butter and fill. Roll into snails, put on baking paper, grease with mixture of water and butter and sprinkle with sesame, flax…Bake between 30 to 40 minutes on 180 degrees until get nice golden color.
