Lemon Cream

Ingredients

  • 2 eggs
  • 2 tablespoon fructose
  • 2 small lemons
  • 5 g vegetable gelatin
  • 2 dl whipping cream + some more for decoration
  • 30 g chocolate with 70% cocoa

Preparation

These are measures for two people. Separate egg whites from egg yolks and beat egg whites into foam. In other bowl mix egg yolks with fructose and lemon zest and mix until swell. Squeeze two lemons and warm up moderately their juice. Add gelatin in it and mix until swell. Whip the cream in a sturdy foam. Mix egg yolk filling with egg white foam and whipped cream and gelatin and gently stir to get a nice creamy mixture. Pour into glasses and leave it in the fridge to tighten. Melt chocolate on steam and decorate your sweet with it and with lemon rings.
