Black Cake With Sour Cream


For the dough:

  • 6 eggs
  • 75 g fructose
  • 100 g grated chocolate with 70% cocoa
  • 150 g melted butter
  • 130 g soft spelt flour
  • 1 baking powder

For the filling:

  • 540 ml sour cream
  • 3,5 tablespoon fructose
  • 10 g¬†vegetable gelatin

For the glaze:

  • 4 tablespoon water
  • 100 g chocolate with 70% cocoa
  • 180 ml sour cream


Beat the egg whites into foam gradually adding fructose. In other bowl whisk egg yolks with melted butter, then add grated chocolate. Mix spelt flour with baking powder and too mixture from egg yolks and stir. At the end add foam from egg whites and gently stir all. Pour into rectangular baking dish covered with baking paper and bake on 180 degrees about 20 minutes. When it is baked, remove from the oven and turn it upside down. Let it cool down and cut transversely into halves. To prepare the filling, mix sour cream with fructose. Prepare the vegetable gelatin according to the instructions from the bag and mix in the mixture of the cream. Then, prepare glaze: melt chocolate with water, remove from the heat and add sour cream. Cover the first bark with the filling and cover with the second bark. Pour glaze over the second bark and on the sides of the cake.
