  • 250 g flour (spelt and rye)
  • 1 teaspoon sea salt
  • 1 tablespoon olive oil
  • 150 ml mineral water
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon lemon juice


Casatiello is a the most famous Easter bread in Italy. Typical of Naples, it is served on Easter morning with cheese and cured meat. This chrono variant is essentially Australian bread. In addition to the basic ingredients you can put in the dough handful of chopped ham, bacon, or sausage, a handful of chopped drained mozzarella or some matured cheese if you’re in non-restriction and teaspoon of pepper. Roll the dough up like a cigar and bring the ends together to form a circular shape.
In the original recipe is used Pecorino Romano Cheese and Parmigiano Reggiano Cheese, or similar types of cheese and cooked eggs are inserted into it.
