Mix With Millet


  • 1 cup of millet
  • 2 cups of water
  • 1 small leek
  • 1 tablespoon pepita
  • 2 – 3 tablespoons olive oil
  • spices per your taste: sea salt, pepper, chili…


You should always wash millet well in few waters. As long as there’e foam, it should be washed. Otherwise it will be bitter. As well as every cereal it should be soak in the water overnight in order to eliminate phytic acid. In the morning cook millet in twice as much water. Let to boil minute or two, cover and remove from the heat. It will soon swallow and absorb all the water. The same is the procedure of cooking even if you do not leave it overnight. Fry pumpkin seeds a little in the frying pan. Peel leek and cut in to circles. Heat the olive oil and fry leek with addition of water. When softened, add millet, three to four tablespoons. Mix all, add seeds and spices. At the end sprinkle with little olive oil.
