Tiger Buns


  • 3 cups  flour (mix of spelt and barley)
  • 5 – 6 tablespoons ground flax
  • 1 tablespoon caraway
  • 1 teaspoon sea salt
  • 1 baking powder
  • 2 tablespoons psyllium (not mandatory)
  • 1 tablespoon tahini
  • 1 egg
  • 6 tablespoons goat or other soft cheese
  • 2 cups mineral water
  • 3 – 4 tablespoons olive oil


Whisk egg, add mineral water, tahini, olive oil and cheese. Then add dry ingredients: flour, psyllium, flax, salt, caraway and baking powder. Stir all with wooden spoon and so thick mixture pour into baking dish covered with baking paper. Make small or large buns with wet hands, because mixture is really thick. Sprinkle with sesame and poppy. Preheat the oven on 250 degrees, put buns in it, reduce temperature to 220 degrees, then after 10 minutes reduce to 200 degrees and bake for more 20 minutes. A total of half an hour, but you know your oven best.
