Mini Bagels


  • 300 g spelt flour
  • 1/2 baking powder
  • pinch per taste
  • 3 tablespoons olive oil
  • 1,5 dl mineral water
  • 1 l water for cooking
  • 1 teaspoon baking soda
  • sesame and flax for sprinkling


Make the dough from flour, baking powder, salt and mineral water. It’s better to gradually add water because the flours behave differently. Make the balls and roll them into a stick and connect the ends to the circle. Put about 1 liter of water to boil with 1 teaspoon of salt and drop the bagels in it. When they float on the surface, remove from the water and roll them in sesame and flax, put on a baking paper and bake about 20 minutes on 200 degrees. You can consume them whole, or cut in halves and fill per your wish.

Instead of olive oil you can use pork fat.
