Veal Chops With Rosemary


  • 3 – 4 veal chops
  • 4 – 5 garlic cloves
  • 2 – 3 sprig rosemary
  • 2 dl dry white wine
  • 1 tablespoon pork fat or mixture of olive oil and butter
  • spices: sea salt, pepper


Heat the fat in a pan and fry chops from both sides to get nice crust. Reduce temperature and add mashed garlic and rosemary. Add spice, pepper and pour little water and wine. Cover the dish and leave to cook half an hour. Then remove chops and add to frying pan a bit more wine and scrape what is left at the bottom. Use that to pour over the meat. Serve tomato salad or salad of cooked broccoli.
