Healthy Pancakes

Ingredients

  • 200 g oat flour
  • 1 tablespoon pumpkin seed oil
  • 1 tablespoon ground flax seed
  • pinch of salt
  • very, very little baking powder or baking soda

Preparation

Grate flax seeds into blender. Pour 3 to 4 tablespoons of water over it and leave for 5 minutes. Mix flour with salt and baking powder. Add half cup of water and mix well to to break lumps, then add oil and the remaining water and flax. Leave for ten minutes that flour absorb water. The mixture should not be too thick. If necessary, add more water. Heat nonstick frying pan and bake pancakes on dry. If it sticks a bit, grease with oil and throw the first next pancake off. Fill pancakes with everything you like such as young cheese, ham, bacon, chicken or fish pate.
