Chocolate Cake With Cherries


  • 5 eggs
  • 4 tablespoons of fructose
  • 5 tablespoons of spelt flour
  • 2 tablespoons of allowed oil

For filling:

  • 5 eggs
  • 100 g fructose
  • 1 bar of vanilla
  • 200 g chocolate with 70% cocoa
  • 200 g butter
  • 150 g pit cherries

For decoration:

  • 300 ml whipping cream
  • 50 g cherries


Separate egg yolks from egg whites and whip egg whites into foam gradually adding fructose. Then add egg yolks, one by one and pour oil in a thin layer, constantly mixing. At the end add spelt flour using wooden spoon. Round mold diameter 24 cm cover with baking paper and pour in it prepared mixture for the crust. Bake in preheated oven on 200 degrees until get nice golden color. Cut the baked crust crosswise on two parts. Prepare filling: mix eggs and fructose and cook on a steam constantly stirirng using whisk until mixture thickens. Add crushed chocolate and peeled vanilla seeds and stir until you get compact mixture. Add melted butter to cooled mixture and mix well. At the end, add drained cherries. Place first crust back into the mold, coat with prepared filling and cover with second crust. Leave to cool and to thicken. Decorate cooled cake with whipped cream and cherries.
