Saddle of Venison Cake


  • 3 eggs
  • 50 g fructose
  • 100 g butter
  • 100 g chocolate with 70% cocoa
  • 75 ml almond milk or whipping cream
  • 50 g spelt flour
  • 1 teaspoon baking powder
  • 100 g ground hazelnuts

For glaze:

  • 100 g chocolate with 70% cocoa
  • 3 tablespoon allowed oil
  • 50 g chopped hazelnuts


Whip egg whites gradually adding fructose to get sturdy foam. Then add one per one egg yolk constantly mixing. Melt chocolate and butter on medium temperature, cool a bit and add to whipped eggs. Then add almond milk, mixture of flour and baking powder and at the end mix ground hazelnuts stirring with wooden spoon. Grease ribbed mold with butter and sprinkle with flour and pour in it prepared mixture. Bake in preheated oven on 180 degrees about 35 to 40 minutes. The cake is baked when the dough is separated from the edges of the mold. Turn over baked cake on the plate for serving. Melt chocolate with a little oil and pour over the cake. Sprinkle with chopped hazelnuts.
