Mackerel With Vegetables

Ingredients

  • 500 g mackerel
  • 1 large onion
  • 2 red peppers
  • 4 tomatoes
  • 2 garlic cloves
  • 1 teaspoon hot chili pepper
  • sea salt
  • pepper
  • olive oil
  • 2 dl tomato juice
  • parsley

Preparation

Clean the fish, drain and spice per your taste, salt it, add pepep and hot chili pepper. Arrange on a baking tray over the baking paper, sprinkle with olive oil and bake in preheated oven on 200 degrees about 30 minutes. Cut the onion into wedges and fry on a little allowed oil for frying. Cut the peppers into cubes and fry together with onion. Peel tomato and cut into larger cubes and saute for few minutes together with other vegetables. Add garlic and spices per your taste, pour tomato juice and cook for 15 minutes until the sauce is thickened. Cut the fish into larger pieces and serve over the vegetables. Before serving sprinkle with chopped parsley.
