Ingredients

  • 700 g spelt flour
  • 1 teaspoon sea salt
  • app. 400 ml lukewarm water
  • 150 g pork fat

For filling:

  • 400 g minced meat
  • 1 onion
  • sea salt
  • pepper
  • chopped parsley

Preparation

These delicious tiny treasures, Manti or Mantu, dumplings with spiced ground meat and onion, is one of the all time favorite dishes in Turkey. Now you can prepare your own chrono manti. Mix in a bowl flour and salt, and slowly pour lukewarm water to knead the soft dough. Cover with foil and leave to rest 30 minutes. Then, divide the dough into 8 pieces and form balls. Grease each ball with melted pork fat and leave to rest 20 minutes. Prepere filling: chop the onion and fry on a little oil, then add minced meat and spice per your taste. Saute for about 10 to 15 minutes. Leave on the side to cool. After resting, stretch balls using rolling pin and then with your hands. Sprinkle with melted pork fat. Stretch all the balls and arrange them one over the other. Cut the dough into squares per your wish and put on each one tablespoon of cooled filling. With greased hands gather the ends toward the middle to form ball. Arrange formed balls in a greased baking dish with ends turned down. Grease them with the remaining pork fat and bake in preheated oven on 200 degrees about 40 minutes.

At the end of baking you can pour mixture of sour milk and chopped garlic over the manti, and put back in the oven to gratinate a bit.
