Chicken Pate In Cucumber Boats


  • 3 – 4 cucumbers
  • 500 g cooked chicken + little broth from cooking
  • 1 small onion
  • 1 garlic clove
  • 1 lemon
  • 2 tablespoon olive oil
  • sea salt
  • pepper
  • chopped spice herbs (parsley, basil)


Wash cucumbers and together with skin cut into 3 – 4 small pieces, and each piece horizontally cut into half, scoop out the middle to get shape of boat. On a little oil fry chopped onion to become translucent, add garlic and transfer all into blender. Add cooked chicken and a little broth from the cooking chicken. Mix until get nice pate. Spice with salt, pepper, lemon juice, olive oil and chopped spice herbs. Put prepared pate into piping bag with a star tip and stuff each boat with it. Keep on a cold place until serving.
