Spanish Pie


  • 4 eggs
  • 200 g cheese
  • 200 g bacon
  • 200 g olives
  • rosemary
  • salt, pepper
  • 5 or 6 tablespoons of spelt flour (or some other integral)
  • 1/2 baking powder
  • 1 dl grape seed oil


First fry chopped bacon and let cool. Then whisk eggs, add spices, chopped olives, crumbled cheese and bacon. Then slowly add flour and baking powder. You do not need to make a thick mixture like for pancakes, but you should see the whisked eggs. What the mixture is more fluid (but not to be like scrambled eggs), the dough will be airily. Pour the mixture into dish covered with baking paper and bake on 220 degrees until get nice golden color.

If you’re in restriction phase use mozzarella and consume this pie from time to time, but if you’re in non-restriction you can use hard sheep cheese or other per your taste.
