Almond Cake


  • 100 g chocolate with 70% cocoa
  • 2 tablespoon black coffee
  • 100 g butter
  • 80 g fructose + 1 tablespoon
  • 3 eggs
  • pinch of salt
  • 40 g ground almonds
  • 75 g spelt flour

For topping:

  • 100 g chocolate with 70% cocoa
  • 4 tablespoons strong black coffee
  • 160 g butter
  • almond leaves for sprinkling


Pour coffee over the crumbled chocolate and cook on the steam until melted. Leave to cool a bit. Mix softened butter and fructose using mixer. Then add one by one egg yolks, melted chocolate, spelt flour and ground almonds constantly mixing to get compact mixture. Whip the egg whites with pinch of salt and tablespoon of fructose into foam and pour into chocolate mixture and stir well. Cover round form for cake with baking paper and pour prepared mixture in it. Bake in preheated oven on 180 degrees about 25 minutes. Prepare topping: on the steam melt chocolate, butter and coffee. Leave to cool a bit and pour over the cake. Decorate with almond leaves.
