Snail Pie With Bacon


  • 300 g spelt flour
  • 50 g barley flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon ground flax
  • 80 g pork fat or butter
  • app. 200 ml water

For filling:

  • 150 g crumbled cheese
  • 2 tablespoon sour milk
  • 1 teaspoon chopped spice herbs
  • 100 g sliced bacon


For the dough mix in a bowl flour, salt, baking powder and ground flax. Add melted pork fat or butter and water to get nice, soft dough. Wrap the dough into foil and leave to rest for ten minutes. For the filling mix crumbled cheese with sour cream and mix well. At the end add spice herbs per your wish. Put the dough on working surface sprinkled with flour and using rolling pin stretch it into square. Cover the dough with cheese filling and arrange sliced bacon over it. Cut the dough into stripes the width of slice of bacon. Wrap the stripes one around the other into circle (it is best to do that directly in a round baking dish starting from the middle). Coat the pie with the mixture of oil and water and bake in preheated oven on 200 degrees for about 40 minutes.
