Sausage Stuffed Onions In Tomato Sauce


  • 10 onions
  • 600 g fresh homemade sausages
  • salt
  • pepper
  • chopped parsley

For sauce:

  • 500 g tomato
  • 1 small onion
  • 2 garlic cloves
  • parsley, basil, thyme


Peel onions and cook in a water ten minutes to soften. Remove from the water using perforated spoon and leave to drain and cool. Then cut the top of the onion and scoop out each taking care to keep 2 – 3 outer layers to get shells. Then chop inner layers and fry on a little oil. Add the meat squeezed out from the sausages, spice per your taste and sprinkle with chopped parsley. Briefly fry and leave on the side to cool. In the meantime prepare sauce: chop the onion and garlic and fry until translucent. Blanch tomatoes and peel the skin, then cut into cubes. Cook tomatoes with onion and garlic for some ten minutes until sauce thickens. Add salt and pepper and other spices per your taste. Carefully spoon sausage mixture into onion shells. On the bottom of the baking dish pour tomato sauce and arrange stuffed onions on it. Pour water as needed and sprinkle with little olive oil. Bake in preheated oven on 200 degrees about 30 minutes.
