Nectarine Galette


  • 150 g spelt flour
  • 50 g ground almonds
  • 100 g butter
  • 2 tablespoon fructose
  • pinch of sea salt
  • little cold water
  • 4 – 5 nectarine
  • juice of 1 lemon


In a bowl mix flour and ground almonds, then add fructose, pinch of sea salt and butter cut into cubes. Pour a little cold water and knead smooth dough.Wrap dough into foil and leave to rest half an hour in the fridge. Cut nectarine with the skin into thin pieces and sprinkle with lemon juice. Stretch the dough between two sheets of baking paper and form circles with the molds. Stretch each circle using rolling pin and arrange in the middle pieces of nectarine. Fold the ends of the dough to the middle and gently crinkle them. Bake galette in preheated oven on 200 degrees about 25 minutes. Sprinkle with ground almonds per your wish.
