Cold Vegetable Soup

Ingredients

  • 6 tomatoes
  • 1 cucumber
  • 1 red pepper
  • 1 yellow pepper
  • 2 zucchini
  • 1/2 onion
  • 2 garlic cloves
  • sea salt
  • pepper
  • 6 dl homemade tomato juice
  • 2 tablespoon allowed oil
  • parsley, basil, oregano

Preparation

Peel tomato and cut into cubes. Peel cucumber and remove the seeds if larger and finely chop. Remove the stems and the ribs from red and yellow pepper and cut into cubes. Also, peel zucchini and cut into cubes. Mix all vegetable in large deep bowl and gently stir. Add chopped onion and garlic and spice with salt and pepper per your taste. At the end pour tomato juice and sprinkle with chopped spice herbs. Cool in a fridge and serve (the soup will be more tasty if leave in the fridge overnight).
