Stuffed Squid


  • 500 g squid
  • 2 onions
  • 4 garlic cloves
  • 1 lemon
  • 100 g quinoa
  • 50 ml olive oil
  • salt
  • pepper


First prepare filling for squids: fry chopped onion and garlic on a bit of olive oil, then add quinoa you previously cooked for ten minutes. Spice per taste with, salt, pepper and chopped parsley. Gently stuff each squid body with a filling, then weave a wooden pick horizontally across wide opening of each squid to seal. Fry squids on medium heated oil about 15 minutes. Sprinkle with chopped parsley and basil and lemon juice.
