Eggplant, Zucchini And Tomatoes


  • 200 g onion
  • 200 g eggplant
  • 300 g zucchini
  • 200 g tomatoes
  • 1 egg
  • 150 g allowed cheese


Cut eggplant and zucchini into rings and onion into wedges. In a greased baking dish arrange vegetables. Whisk egg and pour over the vegetables, then crumble cheese and spread it over the surface. Bake in oven at 180 degrees until vegetables soften, and cheese get golden yellow color. Enjoy this fast and healthy meal!
