Millet Pie With Spinach


  • 1 cup of millet
  • 4 eggs
  • 200 g spinach
  • 2 teaspoon of caper
  • 3 tablespoon of olive oil
  • salt, pepper


Wash the millet and soak in the water to overnight. In the morning throw out that water and add new (2 cups) and salt it. Then heat to boil for few minutes. Remove from the heat and cover the dish with the lid. Leave for 15 minutes to swell and absorb all water. In the meantime whip the eggs, add olive oil, millet, chopped spinach caper, salt and pepper. Stir all and pour into baking dish covered with baking paper. Put in the preheated oven and bake on 220 degrees for 20 minutes.

If you use fresh spinach you have to blanch it first.
