Meat Baskets

Ingredients

  • 300 gr minced meat
  • salt
  • pepper
  • paprika
  • onion and garlic powder

For filling:

  • 2 small or 1 large yellow pepper
  • 1/2 bundle spring onion
  • 1 small zucchini
  • 1 tomato
  • salt
  • pepper
  • chive or parsley leaves
  • teaspoon pork fat

Preparation

Preheat the oven to 200 degrees. Mix meat with spices, knead well and put in the fridge. Chop vegetable into stripes or cubes. Heat the fat, add chopped spring onion salt it and saute for a while. When onion get golden yellow add peppers and zucchini. Stir gently, add spices and tomatoes and cook few more minutes.
Take meat from the fridge and form six bolls. Cover muffins molds with meat so that in the middle there is enough space – hole that we will later fill with vegetables. Put in the oven for few minutes to bake meat a bit, then remove from the oven, and stuff with your filling. Put back in the oven to bake until vegetable softened. With a large portion of fresh salads, you have an excellent lunch.

If you use chicken breast instead pork meat, and stuff with one type of vegetable (green or white), this can be perfect dinner.
