Mediterranean Sticks


  • 150 gr spelt flour
  • 1 tablespoon of chia seeds
  • 1 tablespoon flax seeds
  • 1 tsp sesame
  • 3 tablespoons mix spice (rosemary, basil, onion, oregano, thyme)
  • 2 egg whites
  • 50 gr of butter
  • 50 gr of fine cheese
  • 1 spring onion
  • salt


Mix flour with seeds and add spices, finely chopped spring (only green part) and all other ingredients, and at the end crumbled butter. Knead the dough of medium hardness, place between two sheets of transparent film, stretch the dough with rolling pin into a rectangle, wrap it in foil, and leave it in the fridge to rest for about half an hour.
Preheat the oven to 210 degrees, remove the dough from the fridge, cut it into sticks or as desired, arrange into baking tray covered with a baking sheet. Then grease as desired (yolk, sour milk, oil or whole egg, depending on whether you mix eggs and cheese), sprinkle with sesame and bake for about 20 minutes.
