Chicken Rolls With Roasted Peppers


  • 500 gr chicken breasts
  • 2 red pepper
  • 150 gr sliced bacon
  • spices: salt, pepper, smoked pepper, chili or per your wish


Use roasted peppers, or you can buy fresh and roast them in the oven until the skins are completely wrinkled and the peppers are charred. Let the peppers cool for a minute or two, and then remove them from the baking sheet and place them in a bowl.
Cover the bowl with foil or a plate, and let cool for about 30 minutes. When the peppers are cool enough to handle, peel off the skins and seeds and discard them.
Cut the meat on thin fillets, beat a bit with smooth side of the mallet and season per taste.
On each chicken fillet place half of red pepper and roll. Then cover each with sliced bacon and fasten with a toothpick. Arrange rolls in a baking dish and bake until golden brown.
