Zucchini Moussaka


  • 700 gr of minced meat (beef or pork)
  • 4 zucchini
  • 1 purple onion
  • salt
  • pepper
  • dried parsley
  • 200 ml egg whites


Wash the zucchini, peel them, cut lengthwise and bake on a grill. Chop the onion and fry on olive oil with the addition of water and pinch of salt. When the onion is transparent, add meat and continue frying stirring continuously until convert into a compact mixture. Add pepper and parsley and fry for another minute.
Arrange in the baking dish: a layer of zucchini, a layer of meat, and so alternately, but to finish with the meat. Beat egg whites and pour on moussaka. Bake in moderately heated oven for about 40 minutes, or until moussaka gets golden brown color.
